Fat Modification

From the fats and oils obtained from natural resources, the majority of them are used directly or just after refinement. While, others are used after modification by chemical processes.

There are three principal fat modification processes used in industries

Fractionation

It separates fats and oils into more solid and more liquid fractions with respect to their different melting points.

Hydrogenation

Hydrogenation converts vegetable oils into plastic fat forms like butter with greater flavor stability

Interesterification

Interesterification changes physical properties of oil like melting point, consistency and plasticity.
